DietaryREPORTS TO: Food Service DirectorSUMMARY: Under the general
direction of the Food Service Director and/or Kitchen Manager,
prepares foods needed for all departmental feeding
responsibilities. Serves the tray-line and follows established
sanitation procedures.ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Cooks foodstuffs in quantities according to menu and number of
persons to be served.
- Bakes breads and pastries as needed.
- Prepares vegetables and/or main entrees for residents, staff
and special events.
- Plans menu taking advantage of foods in season and local
availability. Makes appropriate substitutions as needed.
- Communicates supply needs to Kitchen Manager.
- Serves tray-line for Health Care residents.
- Tests cooked food by taste, temperature and smell.
- Responsible for following all HACCP and safety guidelines.
- Assists with the preparation of food for special
functions.
- Responsible for restocking and general cleaning as
assigned.
- Delegates duties and supervises kitchen operations including
staff in the absence of the FSD and Kitchen Manager.
- Logs temperatures and follows cool down procedures.
- Pulls items from menu as needed.
- Follows all safety protocols.
- Have good customer service at all times with staff, residents
and their families.
- Other duties as assigned. QUALIFICATIONS: To perform this job
successfully, an individual must be able to perform each essential

EXPERIENCE: 2 years experience in therapeutic cooking; or one year
related experience and/or training; or equivalent combination of
education and experience.LANGUAGE SKILLS: Ability to read and
comprehend simple instructions, short correspondence, and memos.
Ability to follow menu specifications and label foods. Ability to
understand recipes and recipe conversions.MATHEMATICAL SKILLS:
Ability to add and subtract two digit numbers and to multiply and
divide with 10's and 100's. Ability to perform these operations
using units of American money and weight measurements, volume, and
distance. Able to convert recipes as needed, to increase or
decrease quantities.REASONING ABILITY: Ability to apply common
sense understanding to carry out instructions furnished in written,
oral, or diagram form. Ability to deal with problems involving
several concrete variables in standardized situations.OTHER SKILLS
and ABILITIES: Ability to speak, read and write English is required
and ability to speak Spanish is desirable. Skill with dealing with
the elderly is required.PHYSICAL DEMANDS: The physical demands
